I've been on the hunt for a great recipe that I can make for breakfast on a weekend morning and have some leftovers that will freeze well to use during the week. Solution: baby frittatas!
The recipe was super easy, which in a way makes them even tastier.
6 whole eggs
3 egg whites
1/3 cup milk or cream
1/2 tsp salt
1/4 tsp fresh ground pepper
dash Cayenne pepper
1/2 cup diced ham
1 cup shredded sharp cheddar
Whisk together the eggs, then add the milk & seasonings. Prep a muffin tin with cooking spray and evenly distribute all of the diced ham & cheese between the cups. Pour the egg mixture in the cups to fill about 3/4 of the way. Bake for 375 for 25-30 minutes. Enjoy!
