One great thing I can say about my office is that these bitches REALLY love to eat. They're unnecessarily terrified of downtown Dayton, thinking that the Oregon district is like Compton and Wayne Ave is the Detroit Greyhound station, but I think've made my feelings clear on that before.
Today was the last day of someone who has worked her on & off for about 10 years and is moving to Florida. She knew we'd end up having a carry-in for her, so she made a list of sweets she liked and asked that people only bring sugary snacks in. For an office of only about a dozen people, we do NOT eff around when it comes to carry-ins.
We've got donuts, chocolate-covered Oreos, pineapple upside down cake, two pans of brownies, chocolate covered pretzels, dirt cake, chocolate cake and chocolate chip cookies.
And of course, my Peanut Butter Pie (not pictured), recipe handed down from the Great Lando.
1 cup Peanut butter
8 oz Cool Whip
1/3 cup heavy cream or half & half
2 oz cream cheese
1 cup powdered sugar
1 tsp vanilla
1 pie crust
Combine the first 6 ingredients with a mixer on low speed, switching to medium until all of the lumps are smoothed out. Spoon into the pie crust and chill overnight in the freezer. Move it to the 'fridge about an hour before serving to soften a bit.
Killer variations on this recipe include using Dark Chocolate peanut butter, or chocolate Cool Whip, if you can find it.
